National Crunchy Taco Day – Buffalo Chicken Tacos

I am a crunchy taco girl myself and love all types. My children also love tacos and it seems like they request them weekly. They like ground beef and are divided on soft tacos vs. hard tacos. Thank goodness you can get the taco kits with both types of shells now. Now if they could just figure out how to make a crunchy taco shell which does not break before you finish eating it.

Beef Tacos

I think everyone likes a traditional beef taco. You can use ground beef or steak and top it with lots of cheese, lettuce, salsa, sour cream, and guacamole. I try to get a little extra nutrition in by serving it with rice and beans. Try these BBQ Brisket Tacos with Dubliner Cheese Sauce from Girl Carnivore for a change of pace. Chicken Tacos

While less common, chicken tacos are far more versatile. You can do a spin on fajitas with peppers and onions or a Thai version like these Thai Chicken Tacos with Peanut Sauce from Cooking Classy. One of my favorites is buffalo chicken tacos.

Buffalo Chicken Tacos

  • 4 large chicken breasts
  • 1 c. wing sauce
  • 1 c. ranch dressing
  • taco shells or tortillas
  1. Place the chicken in the slow cooker.  Pour wing sauce and ranch dressing over top.  Let cook on low 6-8 hours.  Remove the chicken and shred with a fork.  Mix with the sauce to coat throughly.  Fill your taco shells or tortillas with chicken mixture.  Top with blue cheese crumbles, diced celery and lettuce.

You can top with blue cheese dressing if you prefer. You can also throw some diced celery in the crock pot to cook with the chicken.

Fish or Shrimp Tacos

People either love or hate seafood tacos. I happen to like them but I prefer my fish or shrimp grilled instead of fried. The coating on fried fish or fried shrimp makes the taco a little heavy for my taste. Seafood tacos a with some type of cabbage or slaw. I like a slaw mixture since it provides a little acidity for the fish, or you can always give it a squeeze of lime or lemon. Pork Tacos

There are some delicious pork taco options out there. My personal favorite is pulled pork barbecue tacos but I live in the south where barbecue is a way of life. I top my barbecue pork tacos with some coleslaw and it is perfect. These Barbecue Pork Tacos with Honey Mustard Slaw from Stuck on Sweet are right up my alley.
