National Chocolate Day is October 28th.  The first thing I think of when i think about cooking and chocolate is brownies.  Everyone loves brownies and there are thousands of ways to bake them.  I have used the recipe off the Baker’s Unsweetened Chocolate box for years but lately I have been making these brownies just because of the thick fudgy icing on top.

There is always chocolate cake.  I made this one for my Almond Joy loving daughter over the weekend.  

Almond Joy Cake

Ingredients
  • 1 box chocolate cake mix
  • 1 14 oz can condensed milk
  • 2 c. coconut
  • 1 tsp. almond flavoring
  • 4 Tbl. butter
  • 4 Tbl unsweetened cocoa powder
  • 3 c. powdered sugar
  • 1 tsp. vanilla
  • 3 Tbl. half and half or milk
Instructions
  1. Prepare cake mix according to the directions on the box.  Bake in a 9×13 pan for recommended time.  

  2. Mix together condensed milk, coconut and almond flavoring.  Spread carefully over warm cake.  I drop spoonfuls on the cake and let it melt a little so it is easier to spread around..

  3. Melt butter on stove or in microwave. Whisk in cocoa until smooth.  Stir in powdered sugar, milk and vanilla until smooth.  Pour over cake and let cool.  You can top with sliced almonds if you wish.  

  4. You can refrigerate it overnight to make it easier to cut.  

Recipe Notes

I like Duncan Hines Devils Food cake mix.  I also used 2 T. Hershey’s regular cocoa powder and 2 T. Hershey’s Special Dark cocoa powder in the icing,

There are thousands of dessert recipes that use chocolate but what if we add chocolate to other dishes?  It is not unusual to add a couple spoonfuls to chili.  Did you know there is a correct way to eat Skyline Chili?  This blog post made me laugh.

This Slow Cooker Chicken Mole is not only made with chocolate but also calls for peanut butter and raisins.   How about adding a tablespoon of cocoa powder to a dry rub for pork or beef like this Cocoa Chili Flank Steak or these Cocoa Rubbed Short Ribs.   A spoonful into Beef Stew to add depth and color? How about chocolate pasta?  This Spinach and Strawberry Salad with a Chocolate Balsamic Vinaigrette sounds interesting.  How about these sinful looking chocolate pancakes to start your morning?

Would you try chocolate tea?   I may have to give this Cabernet Hot Chocolate a try.
