Almond Joy Cake

Ingredients

  • 1 box chocolate cake mix
  • 1 14 oz can condensed milk
  • 2 c. coconut
  • 1 tsp. almond flavoring
  • 4 Tbl. butter
  • 4 Tbl unsweetened cocoa powder
  • 3 c. powdered sugar
  • 1 tsp. vanilla
  • 3 Tbl. half and half or milk

Instructions

  1. Prepare cake mix according to the directions on the box.  Bake in a 9x13 pan for recommended time.  

  2. Mix together condensed milk, coconut and almond flavoring.  Spread carefully over warm cake.  I drop spoonfuls on the cake and let it melt a little so it is easier to spread around..

  3. Melt butter on stove or in microwave. Whisk in cocoa until smooth.  Stir in powdered sugar, milk and vanilla until smooth.  Pour over cake and let cool.  You can top with sliced almonds if you wish.  

  4. You can refrigerate it overnight to make it easier to cut.  

Recipe Notes

I like Duncan Hines Devils Food cake mix.  I also used 2 T. Hershey's regular cocoa powder and 2 T. Hershey's Special Dark cocoa powder in the icing,
