Delicious Fall Desserts for National Dessert Day

October 14th is National Dessert Day

October is a great dessert month, there are apples, pumpkins, and spice everywhere. To celebrate National Dessert Day I  assembled a collection of must-try fall desserts in four different categories, hopefully, there is a little something for everyone.  Fall flavors such as apple and pumpkin abound in these recipes.

Harvest Cake

I am also including the recipe for my Great Grandmother’s Harvest cake. They lived on a farm in Virginia in the 1940’s and she would fix it for the crew which came to harvest the crops every year.

Mom's Harvest Cake
Course: Dessert
Keyword: cake
Ingredients
  • 1 cup butter
  • 2 cups sugar
  • 2 1/2 cups flour
  • 3 eggs
  • 1 tsp salt
  • 1 tsp baking powder
  • milk to make the right consistency, fairly thick
  • 1 tsp vanilla or lemon extract
Instructions
  1. Cream together butter and sugar.  Add eggs and mix well.  Mix in dry ingredients.  Add flavoring.  

  2. Bake in greased tube pan at 325 degrees for an hour or longer as necessary.

Recipe Notes

The original recipe calls for 3, 4 or 5 eggs.  My great grandmother would have used eggs gathered by my mother.  I am assuming they were probably smaller than the modern large egg so I use three.  If you decide to use more eggs, you should cut back the amount of milk used.  

You can substitute buttermilk for the milk for more tang.

I remember my mother adding black walnuts when she made it.  I hate black walnuts and they can be expensive and hard to find.  Regular walnuts or pecan are an excellent substitute but they should be finely chopped.  You can also add chocolate chips or coconut instead of nuts.
