Rainbow Cookies – 24 Days of Christmas
These cookies are not for the baking novice. They are easily the most time consuming cookies I make. However they are spectacular and taste amazing.
Make sure you crumble the almond paste as finely as possible, it will melt into the dough but you don’t want any huge lumps. The frustrating part for me is spreading the dough in the pans. It is not like a brownie or cake batter which spread easily to fill the corners. You have to struggle to get it even and it is very sticky. It will barely cover the bottom of the pan. The edges are not going to look pretty but they will get trimmed off the finished product.
The layers actually come out of the pan easily but you flip them a second time on to a cooling rack and that is generally when disaster strikes. I cracked the red layer right down the middle this time and the green layer into a jigsaw puzzle of pieces. While this upsets me as a baker, it really does not make any different in the finished product. Just reassemble the layer and spread with jam and weighing it down in the refrigerator overnight will take care of the rest.
These really are worth the effort occasionally and will elicit oohs and aahs on any cookie tray.
