Bite Size Lava Cakes – 24 Days of Cookies

These bite size Lava Cakes are not technically a cookie but they do look pretty and festive. My daughter just returned from a Disney Cruise, where she almost certainly had lava cake every night since it is her favorite. What is the first thing she asks me to make when she walks in the door? Lava cakes, just what I want to make in the middle of Christmas cookie baking.

I came up with these bite-size lava cakes to make us both happy. She ate two right out of the oven but the rest make a very pretty addition to the holiday dessert tray. These actually firmed up once they cooled down so they do not gush out lava when you bite into them. They are more like a super rich, fudgy cookie.
