Soft Pumpkin Cookies – 24 Days of Cookies

My daughter Ashley is pumpkin obsessed.  She loves anything pumpkin.  These soft, fluffy pumpkin cookies are for her.  They are unbelievably moist and fluffy with a brown sugar icing.  I made them a little too big, they would be better a little smaller and almost bite size.
