Italian Meatball Soup

January is National Soup Month. This is one of my go-to soups. It is simple, satisfying and a favorite with the kids. This recipe comes from my oldest daughter’s step-mother. I had a kitchen accident a few years ago. I had severe second-degree burns on my arm and torso so I was unable to do much for over a month. At the time I had three young children, my ex-husband was having to manage the three children and all the household duties. He did a great job but to have someone bring dinner and not have to worry about it was a very sweet gesture.

This soup was also my first introduction to frozen meatballs which have become a staple in my freezer. The girls use them if they are making spaghetti and like to simply snack on them with some barbecue sauce. I generally have all the ingredients for this soup on hand so it is quick and easy on a busy night.
