Rich Chocolate Cake with Fudge Frosting
National Chocolate Cake Day is January 27th. This easy chocolate cake uses a cake mix with some extra ingredients. The pudding and sour cream make the cake a little denser and very moist. The coffee enhances the chocolate flavor and makes the end result taste homemade.
The cake layers puffed up in the cake pans but deflated once they cooled. I ended up with nice flat layers instead of the rounded layers you normally have with a cake mix.
I am always on the hunt for a good chocolate frosting. This one is definitely a winner. It is rich and fudgy and the recipe made plenty of icing.
This traditional chocolate cake is easy to make with a thick fudge frosting.

Ingredients
- 1 box devil's food cake mix
- 3 oz box instant chocolate pudding
- 1 cup sour cream
- 1 cup cooking oil
- 4 eggs
- 1/2 cup brewed coffee
- 10 Tablespoons butter
- 1 1/4 cups unsweetened cocoa powder
- 5 1/4 cups powdered sugar
- 2/3 cup milk
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350 degrees
- Add all incredients to mixer bowl and beat until smooth batter forms.
- Divide the batter between two 9 or 10 inch cake pans
- Bake 30 minutes
- Remove from oven and cool in pans for 10 minutes before turning out on to a cooling rack.
- Once the layers are completely cool, frost with Fudge Icing
- Frosting
- In a saucepan, over low heat, melt butter and stir in cocoa powder.
- Transfer to a large mixing bowl. On low speed, add in powdered sugar and milk, alternating the two.
- Add vanilla.
- Turn mixer to medium high speed and beat about 5 minutes, until frosting is smooth and creamy. You can add additional milk if the frosting is too thick
